Patatje Oorlog -or- The Best Street Food You Will Ever Eat

PATATJE OORLOG
The glorious and simple combination of ingredients that is patat oorlog or patatje oorlog... I can't even spell in English, let alone Dutch.

Patatje Oorlog is a rather common Dutch street food consisting of french fries, mayonnaise, chopped fresh onion, and peanut sauce.  Having never been to the Netherlands, I couldn't tell you if people actually eat this over there, but they'd be crazy not to.  It's creamy, salty, tangy, peanut-y and spicy.  Oh, and did I mention it is served on french fries?!  Kiss chili cheese fries goodbye, we have better condiments 'round here.

Peanut Sauce:

1/4 c. onion, finely chopped
1 - 2 cloves garlic, chopped
1 T soy sauce
3 t. brown or white sugar
3 T chunky peanut butter
dash of lime juice
dash of Sriracha
Chopped cilantro (optional)
Black pepper to taste

I used just generic cook-them-yourself fries from the freezer section of the local grocery and they were perfect.  (I baked them, instead of the suggested frying... that would have been just too much grease.)

To Serve:

Chop some sweet white onions finely
make a pile of fries and add a dollop of mayonnaise (I prefer Miracle Whip, but to each their own)
Add a dollop of Peanut Sauce
And a grind of fresh black pepper just finishes it off nicely!
Eat those fries!
